1 cup Crushed wheat  (Bulgur)
1 and half cups boiling water
1  teaspoon salt
1/4 cup fresh lemon juice
1/4 cup Olive Oil
1 packed cup minced parsley
2 medium  tomatoes, peeled and minced
half a cup of chopped  fresh mint

1.First thing is to wash the bulgur in warm water, leave it to strain until you prepare the rest of the ingredients...
2.Add salt, lemon juice, olive oil, and mix thoroughly.  Cover tightly and refrigerate until about 30 minutes before serving.
3.About 30 minutes before serving, stir in remaining ingredients and mix well.  Taste and adjust seasonings  adding salt as needed.  Serve cold with desired meal and pickles. Enjoy
