4 eggs
1 and ½ cups all-purpose flour
1 cup granulated sugar
1 cup whole milk
½ cup olive oil
2 tsp baking powder
1 tsp vanilla
1 lemon zest and juice
1 cup finely shredded coconut flakes
100gr cracked Almond or any, choice of nuts











In a medium bowl, stir together flour, baking powder and salt. Set that aside. In a large mixing bowl,
combine eggs, sugar, vanilla, milk and olive oil. Add lemon zest, lemon juice, coconut. Allow eggs to,
stand at room temparature for 30 minutes. Meanwhile grease 9 inch springform pan. Preheat the oven,
to 160c to 220c degrees  Beat with an electric mixer on medium speed for 4 minutes. Add flour mixture, to egg mixture and beat on low speed just until combined (batter will be thick) Pour the batter in 9 inch, springform pan and bake for about 40 -45 minutes. Enjoy
