Ingredients
1red mexican small red beans
1 cup canned corn
2 red roasted pepper, diced
1/2 bunch of parsley, finely chopped
bunch of shallots, thinly sliced
Olive oil
Salt
Pepper
Lemon juice
Preparation
In a medium mixing bowl, combine washed and rinsed red beans and corn
Add diced roasted red peppers, thinly sliced green onions, chopped parsley
Whisk lemon juice and salt in a small bowl and add olive oil,mix them well and pour over the salad
Toss to coat or stir evenly. Enjoy
