500gr lean, lamb
2 medium, eggplants
2 small onions, finely chopped
2 tbsp cooking oil
3 cloves garlic, minced
2 cubanella pepper, petite diced
2medium, tomato, peeled and petite diced
400gr plain yogurt
Black pepper
Red crashed pepper (optional)

Preheat the oven to 220c and Roast the eggplants in the oven for an hour.
Meanwhile, to prepare lamb mixture, in a medium nonstick pan, sauté onion in 2 tbsp oil until lightly browned. Add diced green peppers and keep sautéing until tender. Stir ground beef or lamb, paprika, salt, black pepper in and mix to combine, add finely diced tomato,put a lid on it and cook for 10 minutes more After eggplants are done, let it cool down to room temperature. Peel and dice the eggplants
Set aside In a medium bowl, whisk minced garlic, yogurt and some salt until smooth.
Place roasted and diced eggplants on a medium oval platter.Drizzle over the garlic flavored yogurt on eggplants, Spread beef mixture on top of yogurt. Enjoy
