Ingredients
3 mahi mahi fillets (Dolphinfish)
1 package frozen lima beans
1/3 tsp crashed red peppers
½ tsp Salt
½ tsp black pepper
Snipped oregano leaves
1 Lemon juice
Chopped parsley
A few fresh mint leaves
3 tbsp olive oil for beans
2-3 tbsp oil for fish
Preparation
Combine chopped parsley, lemon juice, 2 tbsp olive oil, salt, pepper, lima beans in a medium bowl. Place lima bean mixture equally to prepared aluminum foil pieces, according to numbers of fish fillets you have.
Season fish fillets with oil, salt, pepper, oregano leaves, lemon juice, pepper chilli flakes, and put a few fresh mint leaves on top of each mahi mahi fillet.
Place fish fillets over lima beans and fold aluminum foil loose. Put each individual wrapped foil onto a cooking dish. Bake for about 20- 25 minutes to 220c pre-heated oven. Enjoy
