  Ingredients
For dough
2 cups whole milk
half a cup of oil
2 egg yolks and whites separated
1 tbsp dry yeast
5-6 cups all-purpose flour
2 tsp Salt
2 tbsp granulated sugar


  For Filling
2 eggplants cut in cubes and fried
A handful chopped parsley
1 big onion chopped finely
2 tbsp oil
1 tbsp pepper or tomato paste
Salt, pepper

 

  Preparation
To prepare filling, put oil in a sauce pan, add chopped onion and sauté them for a while.
Add pepper paste and stir to combine. Add fried cube eggplants and parsley stir a few times,
and sprinkle some salt and pepper, then turn the heat off and set that aside. Put milk and sugar,
in a large mixing bowl and stir it to dissolve the sugar. Heat that in the microwave for about 60 seconds.
Add dry yeast, set aside and let it rise for 15- 20 minutes. Take the milk yeast mixture back and add egg, whites, oil in it and gradually add all- purpose flour. Knead it evenly for 10 minutes or so. Turn dough, out onto a lightly floured surface. To pat dough into a loaf shape, use your hands to gently pat and pinch, tucking edges underneath. Cut it into 5 peaces, grab one of them and start to roll with rolling pin. It should, be as thick as "Turkish rolling apple pie" dough, put 6 tbsp filling onto one edge and roll it till the end.Repeat the process until you are done with the other pieces of dough. Brush them with egg wash and,lightly score borek s tops with a sharp knife as many pieces as you want. Preheat oven to 180c, bake for 20-25,minutes or until tops and sides are golden brown. Served hot or cold. Enjoy
